Chef Heberto Eljach has spent more than 18 years learning from top chefs around the world. Chef Eljach takes a lot of pride in his cuisine respecting the original flavors of his native region in Cartagena de Indias, Colombia: the freshest seafood and wide array of fruits and spices.

Respecting traditions, he strives to keep every dish as original as the way his grandmother made them. His philosophy is based on his mother saying, ¨Don’t mask the flavors of such a beautiful fresh fish with heavy sauces!”

Chef Eljach’s professional background has taken him through some of the most acclaimed hotel chains, however he was never happy being “one more.” He considers himself as a trendsetter not a trend follower. His research and practice on ancient Colombian recipes and his ability to translate it into contemporary dishes has made him the preferred Chef during important events for the country. He has been chosen as the main chef during the Cartagena International Festivals where he has catered to special guests: Bill Gates, Mel Gibson, Naomi Campbell, Andrea Casiraghi, The King of Spain - Don Juan Carlos and Doña Sofía, famed writer Gabriel García Márquez and other notable personalities.
